Chocolate Mousse / Cinnamon Cloud

Preparation:
Prepare the infusion
Toast the cinnamon
Add hot mineral water.
Bring cream to a boil
Add it to the cacao until emulsify
Add the egg whites
Mix until get consistency 
Put the mix in the whipping siphon
Prepare the cloud

Cloud formula Ingredients:
1g of Formula 1
150g of Infusion
10g of sugar

Formula Preparation:
Mix gently
Take out the upper foam
Turn on the helium
Design your cloud
